The build-versus-buy decision usually comes down to how unusual your selling logic is. Catalogue, cart, checkout, tax, refunds, and abandoned-cart recovery are solved problems, and an existing platform has already handled the edge cases you have not thought of yet.
Custom becomes the right answer when the business model genuinely does not fit — unusual pricing rules, a booking or rental component, or integration with systems the platform cannot reach. Rebuilding a standard storefront from scratch means paying to re-learn every one of those edge cases, most often in the payment flow.
In Practice
For most small-to-mid businesses I'd point toward an existing platform (Shopify, WooCommerce) rather than a custom build — custom e-commerce only makes sense when the business logic genuinely doesn't fit an off-the-shelf platform's constraints.
