Three to six months is realistic for a SaaS with accounts, billing and an admin side. It is planned so that the sequence gets you to a chargeable product as early as possible β authentication, the core workflow and billing first, the nice-to-haves after β because the fastest way to learn whether the product works is a customer paying for it, not a longer feature list.
The isolation, yes; the infrastructure, usually not. Getting the tenant boundary into the data model on day one costs very little, whereas retrofitting it into a product with live customers is one of the most expensive refactors there is. Separate databases per tenant, dedicated infrastructure and region pinning are different questions, and those genuinely can wait until a customer asks.
